America’s first and only Michelin-starred Korean steakhouse concept is set to make its debut on the West Coast
LAS VEGAS, June 4, 2024 – Gracious Hospitality Management announces plans to open COTE Vegas, the brand’s first West Coast concept in 2025. Located at The Venetian Resort Las Vegas, the Michelin-starred Korean steakhouse, recently named North America's Best Steakhouse by World’s 101 Best Steak Restaurants, will debut early next year as a part of the resort’s $1.5 billion reinvestment project, which will touch nearly every facet of the legendary resort - from groundbreaking entertainment venues to new culinary concepts to renovated suites.
Infused with the opulence and grandeur of Sin City, COTE Vegas will draw inspiration from its renowned counterparts in New York, Miami, and Singapore while introducing new, immersive dining experiences unique to Las Vegas.
COTE Vegas will remain true to COTE's philosophy of marrying the conviviality of Korean BBQ together with the hallmarks of a classic American steakhouse. Guests can expect the highest quality cuts of beef, ranging from A5 wagyu from Kobe, Sendai, and Miyazaki to 45, 90, and 120-day aged steak. The menu will feature the concept's signature Butcher's Feast, offering diners a chance to experience four cuts of the highest quality beef, and a variety of Korean-inspired sides, along with Steak & Eggs, Legend of the Seven Jades, and a variety of other iconic dishes that COTE loyalists know and love. Complementing the menu, COTE Vegas will feature the restaurant's impeccable four-time James Beard-nominated wine program, featuring a 1,200+ label wine list and a suite of classic-but-creative cocktails.
Designed by David Rockwell and Rockwell Group, the renowned architecture and design firm behind Gracious Hospitality Management's recently opened COQODAQ and three new concepts in the landmark 550 Madison, COTE Vegas references COTE's DNA, such as dramatic lighting, a dry aging room, and in-table smokeless grills, and filters these elements through a glamorous Las Vegas lens. Upon entering, guests will be transported into a dynamic tiered dining area inspired by a theater in the round, with skybox private dining rooms, a central bar, immersive lighting, a DJ booth, and more.
"I went to UNLV and my first formative job in the world of hospitality was in Las Vegas so opening a COTE in this entertainment epicenter is more than just any traditional opening—it's a triumphant homecoming," said Simon Kim, founder and chief executive officer of Gracious Hospitality Management. "While COTE Korean Steakhouse is a concept I created in NYC, the pulsating energy, music and entertainment of Las Vegas has always been intertwined in our brand's DNA, and we're taking that to the next level with this opening. I'm honored to collaborate with The Venetian Resort on our first West Coast location and thrilled to be partnering again with David Rockwell as we aspire to create the most iconic Las Vegas restaurant the city has ever seen. We're taking our endless emphasis and focus on excellence in gastronomy and hospitality and amplifying the entertainment angle to the fullest extent to create something the city can be proud of, and I can't wait to bring it to life."
“We’re proud to welcome COTE and it’s an honor for The Venetian to be the flagship location for COTE’s highly anticipated West Coast debut,” said Patrick Nichols, president and chief executive officer of The Venetian Resort Las Vegas. “COTE’s arrival further cements our position as the leader in chef-driven restaurants and world-class culinary experiences on the Las Vegas Strip and exemplifies a new era for The Venetian as we embark on our $1.5 billion transformational re-investment project.”
COTE Vegas will be located in the Waterfall Atrium at The Venetian Resort Las Vegas.
The introduction of COTE Vegas follows an exciting year of expansion for Gracious Hospitality Management, which included COTE Singapore, the brand’s first international concept and COQODAQ, a fried chicken concept in New York City, along with the announcement of the forthcoming 550 Madison project, a multi-level project that features an exclusive sushi restaurant led by Michelin-starred Chef Masahiro Yoshitake, New York’s second COTE Korean Steakhouse, and an all-day multi-bar and dining concept.
